CANIS Cooks: Rack of Venison
The Ingredients
2 Racks of Frenched Venison
2 cups Panko Bread Crumbs
1 TBSP Minced Sage
1 TBSP Minced Rosemary
3 TBSP Minced Italian Parsley
3/4 Cup Yellow Mustard
1/2 Cup Olive Oil
1 TBSP Salt
1 TBSP Pepper
The Preparation

Sear racks of venison in olive oil and a hot pan for 2 mins each side. Remove and let stand for a couple of minutes

Coat all sides in mustard

Lightly salt and pepper all sides

Drag through herb and bread crumb mix so all sides are covered
-
Grill/ bake at 450 degrees meat side up 20-22 mins or until internal temp reaches 135 Fahrenheit

Let rest for 5-10 minutes under tinfoil

Cut into singles or doubles and serve!
