CANIS Cooks:  Rack of Venison

The Ingredients

2 Racks of Frenched Venison

2 cups Panko Bread Crumbs

1 TBSP Minced Sage

1 TBSP Minced Rosemary

3 TBSP Minced Italian Parsley

3/4 Cup Yellow Mustard

1/2 Cup Olive Oil

1 TBSP Salt

1 TBSP Pepper

The Preparation

  1. Sear racks of venison in olive oil and a hot pan for 2 mins each side. Remove and let stand for a couple of minutes

  2. Coat all sides in mustard

  3. Lightly salt and pepper all sides

  4. Drag through herb and bread crumb mix so all sides are covered

  5. Grill/ bake at 450 degrees meat side up 20-22 mins or until internal temp reaches 135 Fahrenheit

  6. Let rest for 5-10 minutes under tinfoil

  7. Cut into singles or doubles and serve!
